Eggs, a Sexy Rack, and a Lack of Ground Pork

I was hungry this morning. Having cooked some spaghetti pies up the other night, I wasn’t feeling horribly creative this morning. I threw some leftover salsa/tomato-mix from California Tortilla into a batch of scrambled eggs. I thought the fresh mix of tomato and onion worked pretty well, compared to some processed salsa that I’ve used in the past.
I got most of my grocery shopping done early today. After forgetting the list inside, I headed to Weis. I’m planning on making Hawaiian-style chili in the crock pot tomorrow, but didn’t have all of the ingredients on hand. I was rolling through pretty quickly (green bell pepper, pimiento, pineapple, tomato juice) until I got to the ground pork. There wasn’t any. How is this possible on a Sunday morning? I didn’t see any pork at all. I wonder if it all got pulled along with the ground beef last week. In any event, a trip to Shopper’s or Giant will be necessary later today. If there isn’t any there, I’ll either have to substitute ground beef or turkey (to a surprise blend of flavors, no doubt) or find another use for the onion and green peppers that will be unusable in a few days.
In other news vision — the server that hosts this blog — has moved, now residing in a new sexy rack. No longer is it stacked on a shelving unit from Sam’s Club. Fortunately, the kegerator is still on-site for crucial troubleshooting and brainstorming session.
if you can’t find ground pork, you could always try making the chili “broth” and then cooking a large chunk of pork in the crock pot. Once cooked, shred the pork with a fork as if you’re creating pulled pork BBQ. I imagine the texture will be satisfactory and the end result quite tasty.
